Craving....


Lately, I've had a pimento cheese fetish. This is definitely a new phase for me...but I'm in it with both feet.



I've yet to try my hand at making it though. Anyone have a great recipe they want to share?

Oh my goodness! I love pimento and cheese and have always been on a search to find one that is just as good a Holiday Ham. I found this in one of my cookbooks, Table of Content...I hope you enjoy!

1 C. mayonnaise
16 oz. shredded cheddar cheese
1 jar sliced pimentos
1/2 t. garlic salt
8 oz. cream cheese softened

Combine the mayonnaise, pimentos, and garlic salt in a bowl and mix well. Add the cheddar cheese and cream cheese and mix until combined. Chill, covered, in the refrigerator until serving time.

I can give you my recipe if you want. I made it for you one time when you came over. .I'll have to find it. I've been eating it from Newk's for the past 5 days or so for lunch. We bought a 16 oz container of it and brought it home. YUM!

You don't have to used aged cheddar. It can be pricey. You could use colby jack and cheddar. Or Mozzarella and cheddar. Also, I used dijon mustard instead of dried mustard powder. The guy a at Lucchesi's recommonded I do that. This recipe will taste like Holiday Ham, Lucchesi's, or Newk's sort of pimiento cheese. Also, the hot smoked paprika makes a big difference. Yummo. I did not use scallions, but I believe Lucchesi's does use them.

I make the version mentioned too--it's supposedly a Weight Watcher version if you use low fat ingredients. I never liked pimento cheese until I found this recipe! I also had it at a restaurant where they put it on bread with bacon, tomato, and cooked it like a grilled cheese. Yummy!
